Astragale opened at 5 rue du Mirail with a simple idea: serve food from breakfast through lunch with nutrition in mind, without turning the meal into a lesson. Granola, avocado toast, seasonal bowls, pastries and creative lattes make up a menu that is easy to comment on or share. The fruit and vegetables are described as organic, and every dish can be made plant-based. The space was also designed to welcome plenty of people, giving it the rhythm of a real neighbourhood café: come to eat, work for a while or have brunch, and a simple “what’s in your latte?” can be enough to start a conversation.
