Aedaen Place houses a brasserie, a pizzeria and a speakeasy with no visible entrance. You cross the pizzeria, pass behind the kitchen, find the small console table and pull. That slightly absurd gesture is the entry ritual. Downstairs: raw concrete, velvet, low lighting. A wall of bottles so tall the bartender sometimes climbs a ladder. Over 300 references. And a way of serving that changes everything: you answer a checklist of questions about your tastes, allergies, mood, and they create something on the spot. Two people with the same checklist get the same cocktail. Which, fairly logically, makes you want to compare.

The bartender asked us the same questions. We got the same cocktail.

The bartender ran through his questions with me, then did the same with the guy next to me. We watched our drinks arrive. Same colour, same glass, same thing floating in it. We looked at each other. He said "what did you answer for the citrus question." It went on for a while after that.
